Happy Superbowl! I’m rooting for the Packers just to annoy my diehard Steeler’s fan friends back home. I made these mini-cheesecakes, which also fulfills my New Year’s Resolution to make a new recipe each month for February! The crust is made from Oreo, and there are chocolate chip, Nutella, peanut butter, and plain ones. YUM! Simple and delicious! I’m definitely keeping this recipe, which I got from Buns in my Oven, a cute little baking blog. I halved the recipe and ended up with 21 cupcake sized mini-cheesecakes, so I’m really glad that I halved it! Forty-two would’ve been WAAAY too much for us. Also, when I realized I was going to have more than 12 and that I’d have to make another batch of crust, I got lazy and just chunked a whole Oreo down in the pan. It worked just as well, so if you’re pressed on time I’d suggest that! Happy Superbowl!
